Originally from Java, cubeb started travelling the world when Arab merchants began trading it in the 7th century. It became a stalwart of the traditional ras el hanout blend, before ending up in Victorian gentlemen's cigarettes in England.
Try thinking beyond North Africa. When cooked, cubeb's allspice-like notes come through. So grind and add to a standard shortbread recipe for a different wintry bake.
Experiment by combining cubeb with citrus. Mix with rice wine vinegar, sesame seeds and orange zest to finish a cold soba noodle salad.
