When I read that people had problems with food sticking, I became hesitant about this purchase. If you have similar concerns, let me put those concerns to rest. I have no problem with food sticking. None! A little oil or your choice of fat will solve the sticking problem too. Perhaps others thought that because the interior of the pan was black it must also be a non-stick coating. Le Creuset does not advertise this pan as having a non-stick coating. The interior is enameled cast-iron. Next, I want to confess I have never been able to get a good sear on anything. Ever. That is until using this pan! Finally, I have juicy chicken breast and juicy pork because the heat retention of this pan is second to none. Finally, let's talk about comfort and ease of use. The handles are large and comfy. You can easily get your hands around them with mitts or silicone holders. I would highly recommend adding the optional lid to your purchase. You'll smile every time you realize you no longer have to clean the stove top from splatter.
