To date, I’m not have any success keeping my new Wusthof 8” classic chef’s knife sharp at all. If anything, It feels like it had dulled it. I have been a sculptor/carver and have other sharping devices that keep my chisels razor sharp along with a power wet wheel sharpener/honer for my knives. I thought this hand tool would be more convenient and close to where I prep for cooking. I even looked up video tutorials ! I am no where close to how sharp the knife should be as illustrated, slicing paper etc. (which I can do with my chisels btw). I haven’t giving up yet and will keep trying the Wusthof hand held tool.

This sharpener is working really well for me. I have gotten my knives back to being a breeze to use and am only sorry it took me so long to realize I needed this! Other sharpening methods were time consuming and took much more caution.
